Menu Plan Monday


Menu planning is definitely not my strong suit. However, as I'm attempting to bring peace and organization to our home, I've started planning our weekly meals again. Plus I was tired of never having enough of something to put decent meals together. So here's what we're eating this week along with my grocery spending. I went a little over my $75 weekly budget. I didn't check items on hand before shopping and got extra eggs and onion which weren't needed.

Breakfast & Lunches - Items already on hand; we keep it pretty simple around here - sandwiches and fruit :)

Dinner:

Saturday - Baked Eggplant Parmesan w/salad

Wednesday - Dirty Rice w/steamed corn

Mommychicky - Thanks for the welcome! Regarding the Barilla, Harris Teeter has Barilla on sale for 5/$5. The whole grain is also included in the sale. Using .50/1 Qs from recent Sunday inserts, those coupons doubled for FREE pasta!
