Menu Plan Monday - May 26th



Hope everyone is having a wonderful and safe Memorial Day weekend! Here's our menu plan and grocery totals for the week. Thanks to the Kikkoman deal at Lowes Foods, I had several $2 OYNO catalinas which I used this week for additional savings. For more meal ideas visit Laura at I'm An Organizing Junkie.

Breakfast & Lunches: Items already on hand including Strawberry Banana Kefir Smoothies. I've never tried kefir before - fingers crossed it tastes good!

Dinner:

Saturday - Pork & Shrimp egg rolls with Golden Veggie Fried Rice

Sunday - Stew Beef & Onions w/gravy served over brown rice, steamed veggies

Monday - Carolina BBQ served on whole wheat buns w/coleslaw, corn on the cob and pork n beans

Tuesday - Feta & Vegetable Rotini Pasta Salad w/honey wheat bread

Wednesday - Dirty Rice (using ground pork sausage) w/corn on the cob

Thursday - Speedy Triple Decker Club (substituting sliced turkey for chicken) w/organic sweet potato fries

Friday - Pizza Out - Ashleigh's Graduation!

Thanks y'all! The pork roast is cooking in the crockpot now. The recipe didn't call for much liquid to be added. Fingers crossed it turns out okay!
