Menu Plan Monday - May 19th




The $75 budget definitely got blown this week. But with a needed trip to Costco for laundry supplies and triples at Harris Teeter, it was worth it. Of course now I have to get creative to help keep the budget for the next two weeks trim!

Breakfast & Lunches: Items already on hand as well as Easy Cheddar Biscuits and Banana Pineapple Bread from Tammy's Recipes.


Dinner:

Saturday - Pork & Shrimp egg rolls w/golden veggie fried rice

Sunday - Turkey Meatballs in BBQ sauce w/mashed potatoes and asparagus & onions

Monday - Salmon Patties w/brown rice

Tuesday - Easy Tuscan Pasta w/homemade breadsticks


Thursday - Taco Style Lentils & Rice, served in warmed taco shells w/diced tomato, shredded lettuce, sour cream and shredded cheese

Friday - Balsamic & Thyme Chicken w/yellow rice and steamed veggies

Isn't Hillbilly Housewife great for those "tight budget" weeks? :) We really like making taco style lentils, too. We just had those last week!

Oh, I lived in GA for 5 years and I miss Harris Teeter!! I heard they started tripling coupons... so jealous... we had the lentil tacos this week too. I cannot get enough of them!
