Menu Plan Monday - September 29th

After last week's challenges of getting dinner made in the evenings after work, I decided to take a new direction with my menu planning this week. I took an hour Saturday afternoon and devoted it to meal prep for the coming week. I browned meatballs, made pizza dough and diced veggies in hopes it will cut down on the amount of time needed to get meals together. Thus making for a less stressful evening. And what a good week to start - homework for Ashleigh begins this week!

Sunday - Roast Chicken with organic brown rice & asparagus and onions

Monday - Sunday Leftovers!

Tuesday - BBQ Turkey Meatballs with organic brown rice & fried squash

Wednesday - Lentil Chili & cornbread

Thursday - Homemade Pepperoni pizza

Friday - Fall Festival night at Ashleigh's school!

Man, I can't believe how good you are at finding deals, couponing and saving money! The pasta recipe sounds delicious -- we're having chili this week too, must be a fall thing. :)
