Wow, I can't believe it's Monday already! Hope everyone had a wonderful Father's Day weekend. Ours was fun and relaxing and filled with lots of pizza and ice cream.

Saturday - Crockpot Tamale Pie
Sunday - Father's Day Dinner Out!
Monday - Veggie Lo Mein
Tuesday - Chicken Salad Sandwiches (adding hard boiled eggs to the recipe) on whole wheat w/organic sweet potato fries
Wednesday - BBQ Turkey Meatballs w/mashed potatoes and steamed veggies
Thursday - Whole Wheat Pasta w/marinara sauce & homemade breadsticks
Friday - Breakfast for Dinner! Homemade waffles, sausage patties & scrambled eggs w/cheddar cheese

Baked oatmeal is my favorite breakfast. I was introduced to it by my mother-in-law. When I make it now, I usually slice up some pear or apple on top, and use applesauce to replace some of the butter or margarine. The fruit on top really makes it delicious, and the applesauce cuts down some on the calories, while keeping it tasty. The menu looks great!
