I'm not done with the craft pumpkins yet! Inspired by Thrify Decor Chick, I transformed some orange craft pumpkins I picked up on clearance at the grocery store into a beautiful bronze (Rust-Oleum Burnished Copper to be exact).

I created tags by printing mongram labels onto cardstock.

Now these pumpkins are ready for our Thanksgiving table!

Results

Dave and I met yesterday with the specialist to discuss the results of the pathology done on the lymph nodes removed during his surgery. The results were good! No signs of lymphoma or carcinoma - praise the Lord! The test revealed a reactive lymph node but not what the lymph node was reacting to. According to the specialist, Dave's deviated septum could have resulted in the polyps that were in his right sinus. Which led to a chronic infection, enlarging the lymph nodes. So thankful we're not dealing with cancer, that the surgery is over and we can move on. Dave is healing remarkably well and got the go ahead to resume his running. Praise be to God.

UPDATE -

Thank you all for the thoughts and prayers. The surgery went well. The doctor removed the two enlarged lymph nodes and some polyps from one of Dave's sinus cavities. She said nothing looked malignant, but it's being sent to pathology for further testing. Dave is resting right now. He's tired, sore and a bit nauseous.

Dave's surgery is tomorrow morning. We have to be at the hospital bright and early. If all goes well, he should be able to come home tomorrow late morning/midday. Dave's Mom is coming up tomorrow morning to take Ashleigh to school. And of course my Mom will be home with the boys. So the little ones will be looked after. Keep us in your thoughts and prayers tomorrow. I'll update when I have a chance.

Since Dave's last appointment with the ENT specialist, we've been bracing ourselves for the worst. As she came into the examining room this morning, we were ready to hear those awful words. Instead, we heard, "Good news!" The results of the blood test did not reveal lymphoma! He did have slightly elevated white and red blood cell counts. But not to the degree to indicate cancer.

We still do not have an answer as to what is causing the enlargement of the lymph nodes. The next step is to see if maybe a dental issue could be causing an infection. If it's not dental in nature, then the specialist will proceed with the surgery to remove two of the lymph nodes.

I can't offer enough thanks to those who have taken the time to pray for us and send healing, loving thoughts our way. It amazes me that people who have never even met us, would support and lift us up during our time of need. Thank you!

As a child, I remember waiting for the school bus with my Mom on cool, October mornings. She would sing a little rhyme about the leaves putting on their coats of red and gold. I remember her saying it was a song her grandmother would sing around this time of the year.

Recently I overheard my Mother singing the same rhyme to Ashleigh as they stood at our front door looking at the changing leaves in our yard. Now that I've found the origin of the rhyme, I'll make sure it continues to be passed along.

What We Know

Thank you to those who have lifted us up in prayer during this time of uncertainty. We know now that Dave does indeed have enlarged lymph nodes - not a salivary gland as the specialist first thought. Two of the glands will need to be removed surgically, and the other slightly enlarged glands in his jaw area will be treated with medication. While they are removing the glands, the doctor will also investigate the calcification and cyst or mold/virus which appeared on the CT scan in one of Dave's sinus cavities. We're also awaiting the results of additional blood work.

Not the news I wanted to hear. But we have a clear course of treatment to follow. So now we just do the next step and move on from there. Please keep us in your prayers!

I'm reading a book by Joyce Meyer called The Secret to True Happiness. In one of the chapters, she talks about the things in our life which prevent us from resting fully in the peace of Christ. I started making mental notes to myself of the things which are keeping me from having that peace. There seems to be three major areas - rude people, things not turning out the way I expect them to and not knowing all the answers. The latter is what especially causes me to worry.

It wasn't until I was reading Jen's adoption story last week, that I realized the source of my need to have all the answers. Like Jen, I was adopted. But there's so much about my conception, my birth that I don't know. I don't even know my birth father. I've been content all my life not knowing. I don't search the Internet for lost relatives. I don't think about hiring a private detective or a reunion with siblings I didn't know I had. I don't ask questions of those who probably know. I had a father growing up, so there wasn't really anything missing.

But maybe having all those unanswered questions, is what creates in me the desire to know all the answers in the face of uncertainty. To undertake the impossible task of figuring out an entire course of events with a sense of omniscience not humanly possible. Which in turns steals my joy and keeps me from fully resting in Christ's peace. Hmmm...

Speaking of unanswered questions, keep Dave in your thoughts and prayers tomorrow. He's going in for a CT scan of a lump under his jaw. The lump is painless and he's had it for over a year. Our doctor told him it was nothing to worry about, maybe just a swollen lymph node. A few weeks ago, Dave's Mom (she's a former nurse) was visiting and he asked her to look at it. She went back and told Dave's Stepdad (a doctor) about it. She calls us back and tells Dave he needs to see a specialist ASAP. His stepdad had major concerns that it could be cancerous. Dave went in last week for a biopsy. We know now it's not a swollen lymph node but a salivary gland. The specialist is waiting until after the CT scan to review all the test results. But she did say the gland should not be that big. I'm trying not to let my mind wander into the area of the worst case scenario. It has also given me ample opportunity to give my worries over to God and affirm that even though I don't know all the answers, He does. And regardless of the answer, He'll be there no matter what.

Please pray for sweet darling Gabriella. She is only 4yo (born the same month and year as Clay). She is awaiting a heart transplant and has suffered a stroke. You can offer your words of support at her mother's blog, Gabriella's Heart.

While I was typing this, Reedy ran in crying with a boo-boo for me to kiss on his arm. Right now, Gabriella's mother would probably give anything in this world to just be able to kiss away her little one's pains. Remember to thank God for your children and for their health.

Reached Our Baby Step 3 Goal

With Dave's unemployment finally coming in, we were able to reach our initial Baby Step 3 emergency fund goal last week! And as usual with us, Murphy showed up to help us celebrate. More car trouble. But this time, it was an inexpensive fix - a new battery for the van. Since we are still in the midst of our "storm cloud", we are going to continue adding to the emergency fund for now. Then we'll move onto increasing retirement and college savings and paying extra on our mortgage (which Dave is really excited about!). So that's where we currently are on our journey of financial peace and freedom - sorta, kinda, not really finished with Baby Step 3 :)

A Second Chance

We've all had moments where we've regretted an action - or inaction. Spoke too soon or with an unkind spirit. Most times, we're only left with our regrets and thoughts of what we could have, should have done differently. That's why today, I feel like I've been witness to a small miracle.

Remember when I wrote about missing an opportunity to provide a meal for a sick co-worker? God had placed a call to service on my heart but I delayed in responding. Well today as I opened my email at work, there was another request for meals! This time, I promptly replied that I would fill both dates if they were still available. Somehow in the short time I replied to the first email, another was sent saying only one date was left. So I picked up the phone and called to claim the remaining date!

Today was the day - to finally dig out the potatoes. The plants had died off and I didn't want to risk any potatoes rotting underground from the rain showers we've been having lately. The kids gathered around as Dave dumped the container out. We shifted through the dirt and found more dirt, more dirt and more dirt. Oh, and five very small red potatoes - very, very small and slightly rotten. {sigh}

If this is my greatest disappointment of the day, then I should consider myself fortunate, right? The kids got to play in dirt, always an enjoyable activity for them. And I discovered something new about myself. That potato growing is just not my thing. Basil yes, potatoes NO!

Last week our HR department at work sent around an email requesting help with meals for a co-worker who is recovering from an illness. Nourishing foods have become a passion of mine. I love to cook and felt this would be a perfect opportunity for me to serve someone else with my talents (which I feel are very few in number!). Unfortunately, I waited and didn't promptly act on the call to service God had placed on my heart. When I called yesterday to select a date for my meal, all dates had been filled.

It was good knowing that between her church and work, there had been an outpouring of assistance for this co-worker. At the same time, I was disappointed that I would not have an opportunity to serve in an area that seemed to be so perfect for me. Why had I not answered the call to my heart when it was given? In the midst of my disappointment, God pointed out that daily I'm presented with opportunities to serve. The elderly neighbor that needs someone to chat with. The husband that sometimes feels forgotten. The woman in the grocery store with the screaming toddler that needs a "I've been there" smile instead of judgement.

Our first tomatoes of the season - finally!

It's been 9 weeks since Dave was let go from his job. Last week he finally received his first unemployment benefit check. It was a lump sum check for the last 6 weeks. We transferred it straight to the emergency fund and now we are $600 shy of the initial Baby Step 3 goal we had set before everything was put on hold! Thus far, we haven't needed to use the emergency fund and I'm hoping we can keep that up.

Pepper plants started from seed

The container garden is finally starting to show signs of growth! The pepper and tomato plants I started from seed are now taking off. Since I started the garden late, the plants still aren't where the should be at this time of year. But maybe we'll see some peppers and tomatoes from these plants by late summer/early fall. I just have to figure out what to do with the 20 some pepper plants I now have. I've come to see that planting EVERY seed in the packet is not the best thing!

Plan B

I was beginning to think that nothing would ever come of my small tomato and pepper transplants. So about a month ago, I invested in Plan B - two, Big Boy tomato plants from the garden center clearance section! With the rain we've had lately, the Plan B's have really shot up and even have a few yellow blossoms coming in!

An Abundance of Basil

We continue to be blessed with an abundance of fresh basil! The basil plants are huge now. In addition to adding the leaves into pasta, pizza and salads, I'm reading up on preserving/drying herbs and making infused oils to make the most of our basil bumper crop.

Potato plants

The potato plants are quietly doing their own thing. I have to admit, I've kind of neglected them lately. With all the rain we've had, I'm assuming they've been getting enough water. A few weeks ago, the plants had purple blossoms. But now, they're a bit wilted and hanging over the trash can. I can't wait to find out if anything is happening beneath the soil!

I think gardening is becoming a new interest of mine. Something I really want to devote more time to learning about instead of my usual trial and error method. I'm currently reading Mel Bartholomew's All New Square Foot Gardening and making plans for next year's garden!

Kombucha Home Brew

My homemade kombucha in old Synergy bottles

Long time, no blog! Seems like it anyway. Among the things I've been up to lately was finishing my homemade kombucha brew. Per the double fermentation directions, I let my kombucha mother ferment in sweet tea for 5 days. I tasted a small bit of the tea at Day 5, but decided it was still too sweet. So, I let it sit for a few more days. Maybe too long. When I went to bottle the kombucha with my juice, it tasted VERY vinegary. Since I'm used to drinking kombucha with fruit juice added, I thought the taste might improve after a few more days. It didn't. Still very vinegary and with no fizz at all :(

I kept the bottles in the fridge for a few days with the intention of trying the kombucha again chilled. But I never did. Dave poured them out yesterday to make more room in the refrigerator. I'm trying to decide whether I should give it another shot. In retrospect, I should have bottled the kombucha on Day 5 with the juice instead of waiting. But I'm not sure about the lack of fizz. I would think that would point to it maybe not fermenting long enough???

Dave is very anxious for me to decide the fate of the kombucha mother in the refrigerator (he likes to organize ie. throw away my stuff LOL!). As I sit here sipping my G.T.'s Synergy (Divine Grape), I'm undecided about giving it another shot.

Thriving With Job Loss

As I mentioned in my last monthly financial check-up, my husband was in danger of losing his job. As expected, he was let go shortly afterwards. Thank God for our Total Money Makeover plan! We had not yet reached our Baby Step 3 emergency fund savings goal. However, we have enough in place to fall back on if needed. With our budget still running somewhat lean from those Baby Step 2 days of paying off debt, we should be able to pay our monthly expenses on my salary alone. Our plan is to continue to grow the emergency fund with anything Dave receives in unemployment benefits (whenever those start - there's a 4-8 week delay).

Despite my initial fears at the prospect of Dave losing his job, I now rejoice in the blessings this change has brought our way. The biggest blessing of course has been having Dave home more and less stressed! And Dave is very excited about having the opportunity now to explore new career paths. We don't know what the future holds. But we have hope and faith in God that all things will work according to His plan.

A Touch of Summer

On one of his recent morning runs, Dave came across three boxes of canning jars which someone had put out by the road as free to a good home. Among the regular canning jars were these three beautiful blue jars - two Ball Perfect Mason jars and one Atlas Strong Shoulder jar.

I adore the aqua blue color of the jars. And they are just right for adding a touch of summer to the dining room table.

I filled the jars with decor sand (note to self: use light brown sugar next time, it's cheaper!) and placed a small, white candle inside each jar. I didn't intend on putting anything around the jars, but the kids eagerly jumped in and started placing shells we had collected from previous trips to Wrightsville Beach on the mat. With the help of little hands, I think it turned out just beautiful!

We started our holiday weekend this morning by heading out the farm to pick blueberries!

As I learn more about nourishing, real foods, I have this growing desire to really connect with where my food is coming from, who is growing it and how it's being grown. We're blessed to have a number of U-Pick farms and farmer's markets in our area which helps to lessen the distance between farm and plate.

It's also a fun experience for the kids! Reedy had a great time picking blueberries. I told him to make sure he only picked the ones that matched his shirt. When he would find a ripe berry, he'd yell out "Blue!" :)

Daddy's Home!

As I spend time focusing on prayer and gratitude, I find myself being thankful for the unexpected blessings resulting from Dave's job loss. Aside from God making a way for us financially, the biggest blessing has been having Dave around more! For the past 10 years, he's worked 50 hour weeks. He missed the fun of lazy Saturdays around the house with the kids and eating dinner together in the evenings. Some days, he'd leave for work before the kids were up and didn't get in until after they'd gone to bed. And the stress of the job put a tremendous physical and mental strain on him as well as the family. It's so frustrating to see someone one you love dealing with such crap day in and day out and not having any power or control over the situation. Towards the end, it got to the point where the precious time we did have together was difficult and frustrating as the job was never far from Dave's mind.

But now, I have my husband, my friend and my support back! And the kids are getting wonderful quality time with Daddy. The change in Dave's disposition has been remarkable. He smiles more, laughs louder and is more present - not just physically but also mentally. He has a new perspective on work, one which he'll take with him in whatever new opportunity God brings his way. When that new opportunity does come along, I know our schedule will change again. But for now, we are enjoying having Daddy home!

Momma's Salmon Patties

I've seen plenty of variations around of this salmon croquette recipe but I'm partial to my Momma's of course! She used to make these growing up and it was one of my favorite meals. I was happy when I finally perfected the recipe on my own.

Ingredients:

1 can Wild Caught Alaskan salmon

1 egg, local & free-range

1/2 - 1 cup organic sweet onion, diced

1/2 cup whole wheat flour

A few tablespoons of oil for frying - I've used olive, organic extra virgin unrefined coconut oil and butter before. Whatever is on hand.

1. Empty can of salmon in a bowl. Don't be alarmed by the flesh and bones! Speaking of bones, the bones are small and completely edible. I believe they even contain calcium and thus some health benefit. However, to suit our family's palette, I remove the bones. If you carefully separate the fish into chunks, it makes it easier to remove the backbones in one piece.

2. Using a fork, mash the fish.

3. Add in diced onion, egg and whole wheat flour. Combine ingredients.

4. Take a scoop of the fish mixture and form into patties.

5. Fry for a few minutes on each side until browned.

I usually sprinkle my cooked patties with a bit of Redmond Real Salt before serving.

That's it! Simple yet tasty.

Well, we have our first full day of thriving despite job loss under our belts. Our Father's Day was quite peaceful and relaxing. While Dave and the babies went out to get donuts for breakfast (a special treat), I spent some time outside on our back porch soaking up the warm summer sun. The breeze smelled so sweet and the warmth of the sun was like the tenderest of embraces. Dave loved the Kale & Sausage Frittata I made him for breakfast! I used this recipe but made changes according to the items I had on hand, all of which came from our lovely farmer's market. Later, we headed out to a nearby park to play with the kids. It was quiet and most importantly shady! We delighted in the swings, the slides (the twisty slide was really fast!) and explored the tree-lined paths and bridges. It also seemed fitting to me the name of the park was Optimist. Dinner was our favorite pizza buffet, followed by an evening stroll in our neighborhood. Reedy squealed with delight at the sight of the fireflies dancing across the yards. And so did I :) Later in the night, I came across the EWTN broadcast of the Holy Rosary. I prayed along with an old rosary I found buried in my nightstand. Meditations on the Glorious Mysteries - of hope, faith and perseverance.

It was a good day. Filled with a multitude of simple joys that a job loss can't take away.

Dave was let go from his job this evening. While we were expecting it, we figured it would be after his return from his upcoming vacation. I'm feeling a bit numb. The only thing that is upsetting me right now is that it puts a damper on what otherwise would have been a great Father's Day weekend for Dave. And lots of questions whirling around in my head about COBRA, whether I should cancel our upcoming medical appointments, what we should do with Dave's 401k. But as I was telling Dave, we really have only two options at this point - give up or move on. And giving up is not really a viable option. The future looks better, but there's also so much uncertainty.

I need to stay focused on our blessings. We're in good health and so are the children. We still have one full-time income coming in. If need be, we could join the health coverage at my job because Dave's termination would be considered a qualifying event. We have our savings. Dave will get unemployment (hopefully a decent amount since he was with the company for 10 years). The mortgage is paid ahead. Dave will be home more. He now has an opportunity to find a better job/career path that's less stressful, with better hours. God is still in control.

Memories of My Deddy

And no, the title isn't misspelled. We always called our father "Deddy" instead of Daddy. Probably a country thing :)

This song brings back great memories of my Deddy. He was such a calm and patient man. When I was a little girl, he'd let me ride with him on the tractor while he was plowing the fields. I'd steer and he'd work the pedals and the gears. Thinking back on those moments, that must have been a really hot ride for him especially under the warm Carolina sun. And I'm sure it slowed him down more than just a bit. But he let me "help" because that was just his gentle way.

I also remember sitting between him and my Momma in his old pickup truck taking our trash to the dump (no fancy waste pickup in the country LOL!). We were going down a dirt road through a field, when he let me take the wheel of the truck. Somehow, I managed to hit every huge bump in the road. We all laughed the entire way to the dump. It was just one of those small moments filled with such incredible joy and love that I will always cherish it.

And when it came time for me to practice driving for my learner's permit, my Deddy was the one that would pick me up from school and let me drive home. He'd also let me drive him into town to run errands. My Momma was way too nervous to ever think about riding with me. But my Deddy was always there, giving gentle and patient instruction.

I miss you Deddy. I wish you were here to see the woman I've beome. To give your kind, fatherly guidance to my husband and delight in my three beautiful babies. I know you would just soo love them to pieces!

Sweet Basil

We were blessed with the first harvest from our little container garden this weekend - fresh basil! Nothing smells more lovely than fresh cut basil. Since we were having homemade pizza for dinner last night, I added a few basil leaves on top.

Pizza Night

For Pizza Sauce:

15 oz can organic tomato sauce

3 oz organic tomato paste

1 tbsp local honey

1/2 tsp dried basil

1/4 tsp dried oregano

1/4 tsp garlic powder

1 tsp onion powder

Combine all ingredients and heat through over low-medium heat. For us, this makes enough sauce for three medium sized pizzas.

For pizza dough - I love, love this very easy pizza dough recipe from Tammy's Recipes. It only requires a 5 minute rise and it freezes very well if you want to make dough ahead of time for busy nights. I do make the following changes to the recipe: I use all whole wheat flour, a whole packet of yeast, honey for sweetener and I omit the salt.

Before placing the dough on the pizza crisper, I roll it out onto a floured surface and sprinkle with organic corn meal.

Top with sauce and organic mozzarella cheese, then add desired toppings. We did an organic sweet onion and green pepper mix with fresh basil leaves from the garden.

Bake at 375 for 20 minutes.

Baby Step 3 Update

It's been awhile since I've provided an update on our Total Money Makeover goals. We are currently on Baby Step 3 (building an emergency fund representing 3 - 6 months of expenses). To date, we are over halfway to our target number and should reach our savings goal by the end of July! BUT with storm clouds on the horizon surrounding Dave's job, we might find ourselves in budget crisis mode. I would like to reach our goal before anything happens, but am thankful for what we have set aside already. It certainly puts us in a much better situation than we would have been pre-Dave Ramsey, when a job loss would have most certainly sent us into credit card debt.

One of the challenges we are facing in Baby Step 3 is maintaining the focus on our larger goals. We've become a bit relaxed in our spending in some areas, particularly eating out. It has left me wondering if we (mainly I) would have the discipline necessary to get us through any impending rough patch. It's easy to say I would cut back on affordable luxuries, but could I really do it? Would I be able to rise to the occasion with a spirit of frugality and resourcefulness?

As summer draws near, I've been thinking about my summer project list (I love lists!). Just things I want to do - some practical, some spiritual in nature, over the next few months.

First and foremost, I want the summer to be marked by a renewed sense of gratitude. I know how very important it is to give thanks for our daily blessings both big and small. But I don't consistently make the effort to do so each day.

I also want to begin a more prayerful existence. When I entered the Catholic Church back in 2002, I took Saint Monica as my patron saint. To me she epitomized what I wanted to become - a godly wife and mother entrenched in prayer. That's what I want to become, but most often, I find myself only going to God in prayer when trouble arises. When it's for certain its a situation I can't control. And through the years, I feel a distance has grown between me and Christ. I desire the close, personal relationship I once had, but find myself fearful of taking the steps towards that. But I'm continually hearing "Seek ye first" being whispered to my heart, so I know prayer really is the first step I must take.

With the kids, I'd like to relax and say yes more. Make sure we get plenty of visits to the library in this summer (and make sure we get our books back in time!). And to help keep Ashleigh occupied, replenish the craft supplies so we can work on some of the projects at No Time For Flash Cards.

I need to go ahead and get our garden started. I've been not so patiently waiting for the peppers and tomatoes to do "something" before transplanting them. But I realized they're in toilet paper rolls with only a small bit of dirt, so there's not really much they can do in their present environment. So I'll be moving them to a bed/containers in the near future. And if the tomatoes really take off (which I'm hoping they will), I'd like to learn how to can/preserve them. That would really help the grocery budget!

I'd like to make sure I get some good reading in this summer. I love to read but find myself constantly picking up books then putting them down unfinished to start another book. On my reading list is Simple Abundance by Sarah Ban Breathnach. An old favorite that I've read parts of for many years but have never read completely through. I'm still trying to digest Nourishing Traditions, but I think I might take a break and pick up Nina Planck's Real Food: What to Eat and Why. I need to pick up a good book on gardening and either read or return a book about the history of Muscle Cars a co-worker lent me.

A few things to do around the house. Finish painting the dining room and current play room (future family room). We're almost done with the priming. The ever present project of decluttering and organizing the house. I'm also working on a simple, more flexible home caring routine ala Simple Mom.

I'm working on a new blog called The Working Home Keeper. I feel there's a need for an increased voice/presence for mothers who balance both home and working outside of the home among Mommy bloggers. I do find it funny that before starting the new blog I felt like I had alot to say on the subject. But now, I can't think of anything to say LOL! That's why there are all of three posts on the blog.

Other things on the list - enjoy some lazy summer days, sip lemonade, eat watermelon, see the fireworks on the 4th, peruse the shabby treasures at the flea market, catch fireflies in the backyard and hopefully make our way down to Wrightsville Beach.

Dirty Rice with Pork Sausage

With all the buzz about swine flu, one might be hesitant to feed their family any pork products. But thanks to our local farmer's market, I know exactly where my meat is coming from. I know how the animals were treated, the conditions in which they lived and what they were allowed to eat because I can actually speak to the person that raised my food!

The pastured pork sausage I buy at our farmer's market is not only delicious, but provides an inexpensive way to incorporate quality pastured meats into our diet without breaking the bank. Because pork sausage crumbles easily when cooked, you can use less and stretch your meat further. One of our family's favorite sausage dishes is this adaptation of the Hillbilly Housewife's Dirty Rice with Fresh Ingredients.

1/2lb local, pastured bulk pork sausage (I use a mild, sage flavored ground sausage from the good folks at Pine Knot Farm)

1 organic green pepper, diced

1 cup diced organic yellow onion

3 cloves minced garlic

1/2 tsp crushed red pepper flakes

1 tsp paprika

2 tbsp organic soy sauce (I use Eden Organic shoyu sauce)

1-2 tbsp water

1 -1 1/2 cups organic brown rice, cooked

Cook and crumble sausage in skillet over medium heat until brown. Drain fat if needed. Add diced green pepper and onion and minced garlic to the sausage. Cook until peppers and onions are tender. Add cooked brown rice to the skillet along with red pepper flakes, paprika and soy sauce. Add 1-2 tbsp of water to the skillet to keep the rice from sticking to the skillet. Mix well and heat for a few more minutes.

We like to have this dish with steamed, organic corn on the side (which we usually mix in) and shredded, raw milk cheddar cheese on top!

It was wrapped in love from a Heavenly Father who knows His child's needs more than she does. At this time - my time - the no is for my greatest good. In His time, the answer will be different. When things are as they should be for the best possible outcome. Because a loving father wants nothing but the best for his children. What an awesome Father we have!

Very slowly at this point! Our seeds have sprouted but we don't seem to be any closer to getting them planted in containers or a bed. Since I was late in starting my seeds, I'm a bit concerned that by the time the plants get of enough size to transplant, the hot summer sun might be too much for them. Next year I will make it a point to get started earlier and will start my reading now on winter gardening!

I went ahead and put the basil plants into large pots and moved them outside, although I probably should have waited. They are just now starting to develop their more mature looking leaves. But I think they will be okay. I also put the rest of the seedlings outside in a sheltered area to harden as well. And to protect them from a little, curly-haired 2yo that did a little pruning to some of Mommy's seedlings.

Potato Sprouts

Since I've taken the photos above, the Grenoblouse lettuce has taken on a light burgundy color and the potato sprouts have shot up another couple of inches. I need to get out and mound some more dirt around the potato sprouts per Laura's tutorial. Despite our late start, I'm hopeful our little garden will have a very productive summer!

My Momma and I have been busy working the load of strawberries we picked over the weekend. Momma did the washing and hulling (she claims I take too much off the top), while I mashed and prepared bowls of no cook freezer jam. It's been five years since we've moved into our house. But looking at the bare walls (if you don't count crayon scribbles) and the mostly undecorated rooms, you would think we were just squatters! As we looked at houses with our realtor, I remember asking myself why so many people waited until they were selling their homes to make changes. Why did they live with their home not quite the way they wanted only to make it better for someone else? We too had a list of things we wanted to do when we moved in. But with the busyness of life, the paneling, the peeling 70s wallpaper and bare, off-white walls, faded into the background. We said we'd get around to it when the money was right or when we had more time.

So what about now? A trip to our outside storage revealed enough unused rollers, tape, plastic sheeting, brushes and primer to at least get us started on prepping the dining room. With a little bit of resourcefulness (and not a lot of money), we can take the first steps in making our home a haven and a reflection of us!

Looks like we have storm clouds brewing on our horizon. Things are a bit uncertain with Dave's job right now. A large part of me just wants to be done with the absolute craziness that surrounds his job. It's held our precious family time and sanity hostage for the last few years. But on the other hand, who wants to be without their largest source of income?

It's a worrisome prospect, but maybe this push out of the nest so to speak, is just what we need to finally raise up and soar like eagles.

Taking 2 cups of the organic yogurt I made in my crockpot, I drained off the whey as shown in this post by Cheeseslave. I didn't get as much whey as she did in her picture, but I got enough to enable me to try some of the fermented recipes in Nourishing Traditions later on. In addition, I had a nice bit of yogurt cheese left after the whey drained off. Blended with fresh strawberries from our farmer's market, it made a delicious dip for our apple slices!

Yesterday afternoon, Dave suggested we check out a thrift store he passes on the way to work (not only does he score roadside treasures, he also scouts out new thrift stores!). I had seen the place before but had never stopped. Most of the time, it looks as if it's closed. But I'm so glad we finally gave it a try!

It was a nice consignment store attached to a bridal shop. The staff was incredibly friendly and helpful. Most of the clothing was brand name items; some new other pieces discounted from 20% - 60% off. I found these two pieces from the 60% off clearance rack.

I heart flare!

The pants are size 0 GAP modern fit with flared legs. Being short and small, it is such a joy when I can find items I can wear right off the rack without any alterations! They fit great in the waist and are just the right length. I love wearing flared legs with my high heels!

The blouse is M.K.M. Designs and is light brown, crinkle pleated with floral design. Dave said the neckline really accentuated my chest, which bought a chuckle from the sales clerk. It definitely needs all the help it can get LOL!

I'm not sure how much these two items would retail for. Since "Dave Ramsey" became apart of our vocabulary, I haven't seen the inside of a mall. But I paid only $11.96. And found a great new place to shop!

I hadn't even entertained the thought of adding potatoes to our backyard container garden. But after seeing this excellent tutorial by Laura at Heavenly Homemakers for planting potatoes in a container, I knew I had to give it a try! From what I've read, potatoes are usually planted in March around here. Of course it is now May. So we'll have to see how our little experiment in potato growing goes!

When you flee the office midday with Red Hot Chili Peppers blaring on the radio. Simple & Nourishing - Feta & Vegetable Pasta Salad

Feta & Vegetable Pasta Salad

This simple dish is adapted from a Kraft recipe. It makes a hearty dinner pasta salad and also works well as a side. We're enjoying this dish quite a bit right now as it makes good use of the tomatoes and cucumbers from our local farmer's market.

Ingredients:

Organic whole wheat pasta

1 -2 tomatoes (local, organically grown), diced

1 - 2 cucumbers (local, organically grown), sliced

1/2 - 1 c diced red onion

Homemade Italian dressing (I used the recipe from Passionate Homemaking)

Feta cheese, crumbled

Cook pasta according to package directions. Dice tomatoes and red onion; peel and slice cucumbers. After the pasta is done, drain and rinse. Combine all ingredients and refrigerate for 1 hour.

From Dinner to Breakfast - Sweet Potatoes

Sweet Potato Muffins

One of my favorite buys at our local farmer's market are good ole' NC sweet potatoes! They're inexpensive, can be prepared in a variety of ways and are quite nutritious.

Here's how I get the most out of our sweet potatoes. From a side at dinner time, to a delicious, moist muffin for breakfast!

For dinner you'll need:

Sweet potatoes - 2 to 4 depending on potato and family size

1 -2 tbsp butter (I use Kerrygold)

cinnamon, to taste

Place peeled and sliced sweet potatoes in a pan, and fill with enough water to just about cover the potatoes. Top with butter and sprinkle with cinnamon. Cook on medium until potatoes are tender, adding more water as needed. Serve potatoes as a side with dinner, reserving 1 to 1-1/2 c mashed sweet potato for next morning.

Morning Prep:

The night before, mix 1-1/2c whole wheat flour and 1-1/2 c water in a bowl and add 1 tbsp of lemon juice. Allow to soak overnight.

For Breakfast:

To the soaked flour and water add

3 tbsp Kerrygold butter, melted

1/4 c organic sucanat

1 tsp baking soda

1 tsp vanilla

1 egg (local & pastured)

1/2 tsp nutmeg

1/4 tsp allspice

1 - 1-1/2 c mashed sweet potato

additional cinnamon, to taste

Combine ingredients in a bowl and fill greased muffin tins. Bake at 350 degrees for 20 - 25 minutes. Enjoy!

Found Treasure

My hubby has made hobby out of "curbside treasure hunting". He's been doing it since college. In fact when we met, his entire dorm room was almost exclusively decorated with found items and freebies given to him by friends. I've since grown to accept my husband's passion for finding gems amongst discarded items. I've also come to see his efforts as helping the environment in a way. Rescuing items that would have otherwise ended up in a landfill.

One of Dave's recent finds was this cute black, upright dresser. We placed it in the dining room for storage of the kid's art and crafting supplies (which were previously spilling forth out of the bottom of the china cabinet). In a pinch, the top could also be used as a small buffet.

Aside from the black, which I think will go well with the color I have in mind for the dining room (I'm thinking along the lines of the Nester's beloved Tobacco Road or Meredith's cheery yellow), I love the detailing on the top and bottom of the dresser.

Maybe when the mood hits me, I'll give it another coat of black paint. But for now, I'm enjoying this newly found treasure!

The kids are so excited to get outside this morning, they've forgotten all about breakfast and have their anxious little faces pressed tightly against the sun room glass doors. Off to enjoy the warm weather and adventures in the backyard :)

My Local Bounty

Taking the No GMO Challenge last week, inspired me to get up Saturday morning and take a trip to our local farmer's market. And what an experience! For the first time, I actually got to speak with the person who grew my food! I inquired about their farming practices, how the animals were treated and what diet they ate.

I learned the strawberries were picked from the field the day before. And along with the tomatoes and cucumbers were grown pesticide free. The Angus beef came from a farm where all the animals are born there and thus known from "conception to table". The cows are raised on native pastures of grass and clover, never given hormones or antibiotics and never confined to a factory feedlot. The farmer who supplied the eggs told me about how their chickens walk about the farm eating grass and bugs, leading a happy chicken life. She even invited me to come visit their farm so the kids could see the animals and enjoy the rope swing. Good ole' North Carolina sweet potatoes still covered in dirt and a bar of goats milk and honey soap, crafted by hand. All local. All within an hour from my home. From the farmer's hands, straight to mine!

A summer-like Sunday afternoon

Deserves a summer-like dinner!

Sloppy Joes on organic, whole wheat sprouted buns with sweet potato fries

Adapted from Recipezaar - My Family's Favorite Sloppy Joes

Ingredients:

1lb local, grassfed Angus beef

1/2 c diced organic green pepper

1/2 - 1 c diced organic sweet onion

15oz can organic tomato sauce

1/4 c organic ketchup

1/4 c organic barbecue sauce

1 tbsp organic sucanat

1 tsp dry mustard

pepper to taste

Brown meat along with diced onions and green pepper. Drain fat. Stir in remaining ingredients, simmer covered for 20 minutes, stirring occasionally. If sloppy joes are too soupy, uncover until desired consistency.
